Best Muffins Ever
You can use this base muffin mix and combine it with any add-ins you want (blueberries, raspberries, chocolate chips, lemon-poppy-seed…the skies the limit!
Combine and cream:
1 cube butter melted
1 cup sugar
1 1/2 cup sour cream
2 eggs
2 T milk
1 t vanilla
Add in:
2 1/2 cup flour
1 T baking powder
1/2 t baking soda
1/2 t salt
Do not over mix. Now gently fold in your goodies. I use about 1/2 to 3/4 blueberries, or chocolate chips. I like more of a muffin taste, but if you want more of the add-ins, go for it! You can also add a little lemon juice/and lemon zest with 1/3 cup poppy seeds to make a lemon poppy-seed muffin as well. Pour into paper muffin cups and spray the tin to prevent additional sticking.
Bake for 20 minutes at 400 degrees.
Makes 12 large muffins. Fill them up, I promise they won’t over spill…ENJOY!
